The tomatillo, also known as the Mexican husk tomato, is part of the nightshade family and a relative to the humble tomato. Originating in Mexico it is a staple in Mexican cooking and can be eaten raw or cooked in many dishes. They are most well known for being the main ingredient in Salsa Verde.
Using the tomatillos
Tomatillos are generally green, although they can ripen to yellow. You will notice that Tomatillos have a sticky residue under their paper-thin husk which is designed to protect the fruit. Simply peel the husk and wash lightly before preparing
